Achieving accurate timing

Three projects in, same type of work, and somehow every single one has taken up to 30 to 40% longer than estimated and I don't even know how I keep getting blindsided by things that should have been quick.
I would really appreciate any tips or advice on working around timing estimates, I'm falling behind
